Throughout the year different foods are highlighted nationally, either by a day, week or month. Let’s look at a few for August. As you probably guessed, August is Back to School Month and also Sandwich Month. With the return to school is the return of packing lunches or wondering if your children are eating a healthy meal at the school cafeteria. August is also Peach Month. Many will be preserving peaches for use during the winter, either by freezing or canning. Guidelines for both can be found at http://nchfp.uga.edu. This is the National Center for Home Food Preservation. This is a great site for canning and freezing guidelines for all foods you are planning to preserve. These are all tested methods and recipes that will result in good quality products and, most of all, safe foods for you to eat at a later date. When looking at canning charts to determine processing times, you need to know that both Hamilton and Merrick Counties are just under 2000 feet altitude. If you have not had your pressure canner dial gauge tested recently, bring it to the extension office for a free test. Either call ahead for an appointment or leave your lid with gauge attached.
